The manufacturing :
A calisson consists of a sweet mixture of almonds and candied fruit (melons, orange peel). A surprising little white with a soft heart is covered with a delicious royal icing available in different colours.
In a second stage we create an Italian meringue. Finally we spread the mixture obtained across pastry plates that we let rest before cooking.
